Watch Michael Anthony Discuss How the Design of the Whitney Will Influence His Cooking

As part of Grub Street’s collaboration with CBS This Morning, Sierra Tishgart interviewed Gramercy Tavern’s Michael Anthony this weekend. He’s getting ready to open Untitled at the downtown Whitney, which Jerry Saltz examines in the latest New York cover story.

Anthony says that he has looked to the actual structure of the Whitney for inspiration. “It really is all about the spontaneous quality of sitting in this gorgeous dining room that’s filled with natural sunlight,” he says. “When you’re sitting in the dining room at Untitled, you can see the High Line and the Hudson in one glance … We’re really drawing some cues off the groomed look [of the museum], and use those lines as inspiration in the food, but there’s also this wild quality of the landscaping that you see on the High Line.” Watch Anthony discuss that in detail, as well as his thoughts on the importance of chefs staying in New York:
