When Hudson Yards, the largest private real-estate development project in America’s history, opens in 2018, it’ll house a dozen restaurants — and Thomas Keller is curating them all. The latest news is that he has draft-picked José Andrés and Costas Spiliadis, who will open Spanish and Greek-seafood concepts, respectively. Both restaurants will be inside the 1 million-square-foot Shops & Restaurants at Hudson Yards complex. When this opens, it will be Andrés’s second New York project: This summer, he’s opening the Bazaar in the forthcoming SLS New York at 444 Park Avenue South.
